What your IT will ask
Where are the mailbox passwords?
Encrypted inside each user's token; the key to them is created in their browser and the server holds it only sealed under the master key. Nothing sits on the server's disk.
Does the server operator see mail?
Not at rest: the server keeps no copy or index. During a request the content is in memory; whoever has access to the running server and the master key technically could. That is why the server is yours.
Read-only possible?
Yes, reading is the default. Drafts, sending, labels and Trash are switched on per mailbox; permanent deletion does not exist.
Exchange, Microsoft 365, a mail server on the intranet?
Microsoft 365 and Outlook.com do not work with passwords (Microsoft requires OAuth, planned). Your own server on a private address: deploy mailmcp inside your network and set MAILMCP_ALLOW_PRIVATE_MAIL_HOSTS=1.
